I would absolutely love a Christmas/midwinter story of any length from these two fandoms! (TBH, I'd love to see it in any of my other requests as well - but these two have the setting already there and ready to go)
I always watch Three Wishes for Cinderella on Christmas eve. It's winter, there's a castle, there's a little magic; Christmas in that setting would be amazing! And Bone? Christmas is canon there, with sudden snow that falls in one big whump, presents and dancing and good food and quiche for the lucky. (Here's the six page Bone holiday special, free online)
I don't have any particular prompts for this, other than celebrating. Or maybe enjoying a quiet midwinter night once things have settled down. I'd want something warm and cheery and maybe a bit funny, and there'd be nothing wrong with good-natured shenanigans. And maybe some reminiscing and feels.

The Big Country: This being set in the 1880s makes me think the way they would celebrate would be quite a bit different than how my other two prompts do! Explore the cultural differences, what Jim maybe brings from the East for holiday traditions, etc!

This movie takes place entirely inside a prison, some kind of holiday fic that either takes place inside or Eric navigating his first holidays outside would be interesting.
Pandora - Ralen, Matta, Jax Zhou, Jett Annamali
There's a lot of fun to be had here - Ralen and Matta are Zatarian alien characters, they've not been exposed to many Earth holidays (honestly, I just want Matta in a paper hat). Alternatively, fic exploring what a holiday on Zatar could be very fun. On a different note, we don't learn an awful lot about Jett's backstory, perhaps he could introduce the others to holiday traditions of his own?
Shardlake - Jack Barak, Matthew Shardlake
Snowed in shenanigans anyone? Matthew and Jack getting caught out when having to travel for a case is a prime opportunity to be closed off and celebrating something together.
Slow Horses - Louisa Guy, River Cartwright
I'm really fond of their mildly dysfunctional dynamic in which they love and cherish each other but also don't really want to admit it. I could see a scenario where one or both of them realise they don't really have another place they want to be over a festive celebration, and go to seek the other out.

休日のわるものさん | Kyuujitsu no Warumono-san | Mr. Villain's Day Off (Webcomic): Akatsuki Red, Shogun (Mr. Villain's Day Off): Shogun/The General has canonically met Santa in the manga (apparently in a dream, but with hints that it really happened). So perhaps he and Red both end up helping Santa one Christmas? Or the two of them celebrate Christmas together--perhaps Red calls a truce so he can give a Christmas present to the General as thanks for the times that he's helped Red when Red got lost.
Vivant (TV 2023): Nogi Yusuke, Nozaki Mamoru: I didn't put any holiday-related prompts in my letter, but it just occurred to me that Christmas is more of a romantic holiday in Japan, so perhaps Nogi and Nozaki have a Christmas date? Or they simply wind up spending time together on Christmas for whatever reason--working together on a mission, or just getting together for a friendly visit (that perhaps turns romantic). Or, since New Year's is more of a big holiday in Japan, they spend New Year's Eve/Day together, and/or visit a shrine together? Again, it can either be because they're working together or something more personal.

I really love the secular parts of midwinter celebrations. I love the pomp and circumstance, the ritual, the decorations, and the time set aside to spend with friends and family. I also love how cozy being inside in front of a fire (or a decorated tree) while curled up with your loved ones is, and I have a huge soft spot for stories where the characters are (comfortably) snowed in at a cabin, mansion, or other beautiful setting. Certainly, 3 of my 4 requested fandoms are set in modern times, and the characters are at least aware of, if not actively participating in the holidays we all know. The 4th, Killjoys, may not take place on earth, but that doesn't mean they don't have their own similar traditions. I would love a story that focuses on that kind of celebratory coziness, or the dazzle of a fancy party, or something where all the pieces of the beautiful, perfect celebration are there, but everything is going wrong (whether for heavy plot-related reasons, or because the turkey is still frozen, someone is exhausted from the party, or being snowed in wasn't exactly anyone's idea of a good time).

For The Pasithea Powder, I think a "Christmas during the war" or "first Christmas together post-canon" could be fun and bittersweet. Especially incorporating Mexican Christmas traditions.
As for Akkadian Empire RPF, the only seasonal holidays I know of are Zagmuk (spring) and Dumuzid (summer), neither of which qualify, but new-moon-based sacrifices and specific offerings and rituals were practiced, especially probably by Enheduanna, the high priestess of the Moon God. So a new moon ritual in winter would be on-topic and interesting!

- generally, I enjoy the winter season and snowy weather, festiveness and stories/myths/etc. related to Christmas or midwinter generally, and both celebrations that are surprisingly sentimental, or ones that are just utterly awful (but maybe there's a moment of happiness at the end, anyway). Stupid/fun/overly formalised/meaningful traditions or horrible/well-meaning family appearances are also all delightful!
